This variety is a medium-sized nut which blanches almost perfectly. Combined with its excellent flavor, it's a great choice for both nut milk and roasting.

Jefferson

One of the larger nuts, this variety has a slightly sweet flavor. It roasts well and is a sure choice for candying.

Good things come in small packages! This smaller nut has a slightly bitter taste that makes it great with chocolate or as an ingredient in baked goods.
